  • 1 green papaya

  • 2 carrots

  • 1 cucumber

  • 1 red bell pepper

  • 1/2 cup fresh cilantro leaves

  • 1/2 cup fresh mint leaves

  • 1/4 cup roasted peanuts, chopped

  • 2-3 Thai bird’s eye chilies (adjust to your spice preference)

  • 2 cloves garlic

  • 3 tablespoons fish sauce (or soy sauce for a vegan alternative)

  • 3 tablespoons lime juice

  • 2 tablespoons sugar

  • Salt to taste
